The Huether Hotel dates back to 1842, when Elias Snider sold this portion of land to brewer Wilhelm Rebscher, who constructed Waterloo's first brewery. After his death, Adam and Christopher Huether began operating the brewery, renaming it the Lion Brewery in 1859, and made several improvements. In 1870 they purchased the brewery and built an addition to the front. The building has gone through several owners. In 1953, the Adlys family acquired the building and restored much of the building's exterior and have also excavated some of the original brewery site. The buff brick King Street façade was added in 1880. Of interest are the corbelled brickwork, keystones above some of the fourth floor windows, and the arches above the second storey windows.
